I have recently discovered that my nine year old son is gluten-sensitive.

He has some very typical responses to gluten that go away when gluten is withdrawn from his diet.

I am now trying to understand the "hidden" gluten in processed foods.

Can anyone direct me or tell me what these additives might be called on a food label?

I follow a book called the chemical food maize. You can buy this in any book shop or common sense organics. And you can join the celiac society and get all the relivant information sent to you.

Good luck I know its hard when you first start down this road.
