Gluten Free Dairy Free Fajita Salad
Makes 4 hearty servings.
You will need:
600gm of beef steak (fillet, scotch fillet, rump)
3 large capsicums
1 red onion
Iceberg lettuce (1 "cup" per person).
1t ground cumin
1t paprika
1t garlic powder
1t gluten free chicken/beef stock powder
1t onion powder
1/2t chilli powder (or to taste)
1/2C cold water
Salt and pepper to season

Lisa's Roasted Garlic Hummus
Guacamole:
2 avocados mashed
1/8 yellow capsicum diced
Juice of 1 medium-sized lemon
1 tomato diced
1T red onion finely diced
salt and pepper to season
Method:
Combine water, stock and spices in a bowl and stir until combined. Slice beef into 1cm thick slices. Place beef in bowl and leave to marinade in fridge for at least half an hour. Cut onion into half circles. Halve and core peppers. Slice them longways in half-centimetre thick slices. Set your grill to hot (or a hot fry pan if you don't have a grill - just stirfry). Layer the beef, then onions, then peppers in the grill. Close the lid and leave it to cook for about 5-10 minutes (depends how well done you like your beef). Make the guacamole while it's cooking (just combine all the ingredients and give it a good stir). Spoon the grilled meat and veges into the lettuce cups. Top with a generous dollop of guacamole, a spoonful of salsa and a spoonful of hummus.
