With all the commercial kitchens around offering gluten free products - how do we know that the products are made/produced in an authentic gluten free environment?

Do commercial kitchens have to be inspected to achieve the standard for gluten free production?

hi I own a cafe in which we produce a huge amount of gluten free foods. I have found that there is no regulations for us to adhere too. We are extremely conscious of cross contamination and do everything possible to elimate this when we bake with gluten free ingredients. However with all our labeling we make sure we state that it is produced in an area containing gluten and to the best of our knowledge our products are gluten free. It is up to the owners/workers to ensure that they are vigilant in up holding this standard. I would inquire at your local cafe or where ever you eat and test them out on a few simple questions about gluten free you wil soon know if they are totally aware of the implications of cross contamination etc. All my staff are well briefed on the subject and I myself have extensive knowledge on the subject.
