Gluten and Dairy Free Chocolate

When its time for a chocolaty treat, theres no need to fill up on dairy and wheat, and crash from the sugar and additives, This is a chocolate brownie with a dairy and gluten free spin! Tried and Tested by the gluten free kiwi!

Ingredients:

2 Cups Caster Sugar
4 Eggs (beaten)
1 Cup of Gluten Free Baking Mix
2/3 Cup of Cocoa Powder
130g of dairy free chocolate pieces (72% dark wittaker chocolate is dairy free and great for big chunks of chocolate in the brownie)
1 Cup of Flavorless oil (rice bran oil is great)
1 1/2 Teaspoons of Vanilla Essence
1/4 cup Chopped Macadamia Nuts (optional)

Method:



Line a 27cm x 18cm Brownie Pan or 22cm Square Cake pan with baking paper.

Preheat the oven to 165 Degrees.

Combine the dry ingredients Sugar, Baking Mix Cocoa Powder and Chocolate Bits in a Bowl.

Add the beaten eggs, oil and vanilla (and Macadamia Nuts Chopped if desired) essence then fold in until combined evenly.

Pour the mixture into the baking paper lined tin, and bake for 40-45 minutes. Be sure not to overcook this, you want the brownie to have a softer fudge center.

Let it cool in the pan. This Treat is great when served warm, with a little chocolate and macadamia nuts drizzled on top, or even some ice cream.

Will Serve around 8 depending on the serving size, its rich so you do not need huge pieces.
