So some friends and I are trying to find some low cost ways of getting together... so we have instigated a cheap and cheerful $7 challenge every fortnight were we all bring a plate or a wine to someones house for a nosh and a chinwag.
There is an added challenge for anyone who feels like making a gluten free dish (so I can eat it).
Tonight I am making
Gluten free potatoes stuffed with sweet corn, ham and feta.
Mine came in at around $6.35
6 Large potatoes
$1.50 shaved ham
1/4 Block of feta
1 Can of creamed corn
salt and pepper to taste
With everything else people are bringing there should be enough to feed us... and 6 potatoes makes 12 halves.
Bake the potatoes in the microwave for 25 minutes.
Allow to cool.
Scoop the middle out and place in a bowel leaving a space of about 5mm around the edge then place hallowed out skin on a baking tray.
Mash the potato and stir in creamed corn, feta, ham and use salt and pepper to season.
Take spoonfuls and put back into the 12 skins.
Cook in an oven on 180 for 20 minutes or microwave to reheat.
*great if you add spring onions or regular onions - sadly that was not on budget.!
