Gluten Free & Dairy Free Mango & Raspberry & Banana Surprise

Since going gluten free I am always worrying about my nutrition... making sure I am getting enough fibre, good fats, omega3's, Vitamins and Nutrients. I look back and can not believe some of the stuff I use to put in my mouth. So when it comes to breakfast time I want to start the day off right.

Here is one of my favourite gluten free breakfast recipes with seasonal summer fruit. The Muesli I use is also great with rice flakes, sultanas, dried fruit and raw nuts... it helps to keep me going long after breakfast is over. I like the idea of having nuts and seeds in my breakfast, helps to curb insulin production so I do not get hungry as soon as I would with normal fruit and cereal (especially as I do not eat yogurt or milk).

1/2 A Ripe Mango
1 Banana
1/2 Cup of Frozen Raspberrys
A Handful of Muesli

One of the things I like best about this breakfast is it is not heavy... I have changed my thinking on using muesli I chop my banana and mango into slices and cubes, place the raspberry's on top then sprinkle the muesli over the top of the fruit.

This is great once the raspberry's melt a little, but still nice and cool for those hot mornings... the best thing is leaving it in the fridge for a few hours and letting the cereal absorb all of the raspberry juice.

Serve with a Hot Black Coffee or Tea... A Great Way To Start The Day!
