1 box San Remo GF Penne Pasta.
2/3 C sundried tomatoes in oil, sliced.
12 Kalamata Olives (Green ones are good too).
1 Spring onion, chopped.
1/4 medium red onion, diced.
1 generous tablespoon capers.
8 fresh basil leaves, finely sliced.
1 C feta, 1cm cubes.
black pepper
olive oil
Boil pasta as per instructions on the pack. While it's cooking chop up the other ingredients. Rinse the pasta with cold water so it doesn't melt the feta. Place pasta and chopped ingredients in a large bowl. Season with pepper. Dress the salad with equal parts olive oil and oil from the tomatoes (depends how much you like on your salad. I use about 3T of each.
You can make this salad into more of a meal if you add some chopped bacon, or shredded chicken, salami or even canned tuna.
