Gluten Free Apricot and Chocolate Cookies

Ingredients:
* 100g butter, softened
* 150g brown sugar
* 1 egg
* 230g Gluten Free Baking Mix
* 1/2 cup Apricots
* 4 tbsp rice milk
* 1/2 block of Chocolate (broken into small pieces)
Lets Make Cookies:
Cream butter and sugar, then add the egg and mix well.
Add milk along with the flour to the egg mixture and mix well.
Add the Apricot and chocolate and mix
Place in spoonfuls on a greased baking tray, allowing a bit of spreading room.
Bake at 180C for 20 to 25 minutes.
