Not sure they totally understand the whole concept as I ordered a dessert that was marked gluten free and as I was finishing it the waitress came along to say that the tuille that was part of the dessert was not gluten free. Luckily I hadn't eaten it but it was served with the dessert. I explained that the dessert cannot be called gluten free if it is not entirley gluten free but, as I say, not sure they could see the significance.
