Gluten Free Bacon and Mushroom Potatoe Salad

Here is an amazing little salad I threw Together for dinner last night. A great one for summer, a potato salad, but not to heavy. I threw plenty of green things into the salad to make sure it was fresh and fun.
Ingredients
2 Large Potatoes Chopped into Cubes
1/2 Bag of Baby Spinach
1 Avocado Chopped Into Medium Sized pieces
3 Rashes of Bacon
5 White Mushrooms(Chopped into quarters
1/2 a Cucumber
Feta for Flavor
Your favourite Gluten Free Salad Dressing
Its Salad Making Time
Roasted The potato's in a little oil salt and Pepper.
You may wish to do this the night before so they can cool and will not wilt the other ingredients.
Chop Cucumber, combine with spinach, cold potato and avocado in a bowl.
Heat bacon in a little oil until cooked then add mushrooms mushrooms, heat through until the mushrooms are cooked. Remove from the heat and cool.
Chop the feta into small pieces and toss through the Vegetable Mix. Once Bacon and mushrooms have cooled, toss them through the mix, season with salt and pepper, then drizzle over your favourite gluten free salad dressing.
I tried a Wasabi mayonnaise with mine... you do not need a lot, as the feta and bacon bring out a cream salty flavour.
