Gluten Free Soup
Gluten Free Beef and Vegetable Soup
Gluten Free Ingredients
400g of Diced Beef Steak (I used rump because it was on special)
Olive Oil
3 Cups of Sliced Onion
2 Carrots Grated
½ a Butter Cup Pumpkin Chunks
4 Cups of Cubed Potatoes
6 Cups of Water
Salt & Pepper
½ cup Green Pimento Stuffed Olives
How To Make Gluten Free Beef and Vegetable Soup
In a large soup pot Saute the onions and garlic in olive oil until it transparent remove from the pot then Brown diced beef in olive oil in the same pot to lock in flavour. Add two cups of water and scrape the caramelized beef off the bottom of the pot to make a tasty stock.
Add the veggies , pepper and salt, and the rest of the water and cook on a low heat stirring occasionally for a least an hour.
Note: Cooking the beef on a low heat makes it tender so you get threats of beef throughout the soup... Tasty!!!!
This will make a soup that is stock with chunky veggies, if you like a thicker soup then mash it to squash the pumpkin and potatoes which will make a thicker consistency.
