These have become a weekend morning tradition for my kids. On special occasions I add GF choc chips or GF sprinkles for "rainbow pancakes"!
In a large bowl, mix:
1/2 Tablespoon buckwheat flour
1C GF plain flour (I use Simple Baking Mix)
2tsp GF baking powder
2 Tablespoons sugar
Add 1 egg and 1C milk and whisk til blended and smooth. Melt about 1tsp butter in a frypan, and fold into pancake mixture.
Over medium heat, cook pancakes until bubbles set. Turn over and cook til lightly browned on underside. Serve warm with honey, golden or maple syrup or my favourite Barkers Lemon spread and a light dusting of cinnamon. Yum!
