Gluten Free butter chicken
500g Chicken Breast Cubed
1 Jar Pataks Sauce
1c of Jasmin Rice
Broccoli
Last night I decided to make my own attempt at butter chicken... normally I would just order it from my local takeaway shop, but as its closed for renovations here was the next best thing.
I heated the cubed chicken in a pan until the chicken was seared. Then places the sauce in the pan and simmered on a low heat for 15 minutes
I cooked the Jasmin rice by the absorption method. 1c of rice to 1 1/2 cups of water bring to the boil, then simmer on a low heat with the lid on for 12 minutes, remove from the heat and then let it stand.
While the rice and chicken are cooked chop some broccoli and place in a steamer for 2 or 3 minutes until lightly steamed... I like my vegetables to have a little bit of crunch.
Once it is cooked place in a bowl and serve immediately. I like naan bread but as this is not gluten free i made some gluten free pancakes earlier which i used to soak up the extra sauce.
