Gluten Free Chicken and Rice Suprise

Last night I was cooking dinner with everything left over in the freezer and kitchen... came up with this dish... and it was not half bad.
Ingredients
500gm Chicken Mince (works with normal mince to)
1 Onion
1 Capsicum chopped
1 Broccoli Chopped
2 teaspoons of Chilli (ground)
2 Tablespoons garlic
Tamari (gluten free Soya Sauce)
Gluten Free Chicken Stock
1 1/2 C of brown Rice
1 Teaspoon of Coriander
1 Egg
1 Spring Onion (garnish)
Salt and Pepper to season.
Instructions
Cook 1 1/2 c of Brown rice in 3c Chicken stock (takes around 20-30 minutes to absorb).
Cooking Chicken Mince and break up, combine with onion capsicum and broccoli and cook thoroughly. In a bowl mix up chilli, garlic, soya sauce and coriander, stir and add to the chicken and veges (may need to ad water). Once veges cook through add the cook rice and stir through. Add the egg and stir through.
Should make 4 good sized dishes! Tastes pretty good cold when you serve it in a lettuce leaf with a little lemon juice on top.
Enjoy
Chop Spring onion and spinkle on top of the dish when you serve it.
