1 can of chickpeas (drained and rinsed)
1/2 Red Onion
1/2 Cup of Sundried Tomatoes Sliced
1/2 a Red or yellow Capsicum Diced
4 Tablespoons of Pesto
Combine the chickpeas, onion, sun dried tomatoes, capsicum, pesto and serve in a lettuce cup.
Great with cold ham and cucumber sticks.
Great on a hot day - really filling makes 4 side servings.
