Gluten Free Chocolate Banana Pancakes
Gluten Free Chocolate Banana Pancakes
1 Cup of Self Raising Gluten Free Flour
1 Cup of Water
1 Tablespoon of Cocoa
1 teaspoon of Cream Of Tartar
1/4 Cup of Chocolate Chips
1 Egg
1/8 Teaspoon of Salt
1 Banana Mashed
2 Tablespoons of Brown Sugar.
Sift Flour, Sugar, Cream of Tartar, Salt Brown Sugar, Cocoa into a serving bowl. Add the egg and A little water and mix together. Slowly add more water until the mix reaches a smooth consistency.
For Best Results cover and leave to sit for at least 30 minutes to let the starches in the flour break down.
Heat a little butter or oil in a non stick pan and heat to a low heat, once batter is melted put a small amount of the mixture and adjust your temperatures to cook the pancakes accordingly.
The mixture should cook and air bubbles will appear in the mixture, once lightly browned and cooked on one side turn over to cook the other side.
Press the pancake lightly to see if its cooked in the middle, if it does not spring back it needs a little longer to cook.
Serve these with slices banana and a little yogurt (if you are not dairy sensitive like me).
Great for a slightly sweet breakfast treat (serve with easter eggs on the side for easter).
