Hi just a quick question.

When substituting amaranth flour for wheat flour, are the measurements the same?

When substituting Gluten Free Flour for Wheat flour you should use a mix of several flours not just one.
If you just used amaranth is would turn out sticky and the texture would look and feel uncooked.
I use a mix of Rice Flour, Buckwheat Flour, Amaranth, Tapioca Flour and Linseed meal.
The ratio is 3,2,1,1,1.

I tried my pancake mix last week using just Amaranth flour with the result described above, then used mostly rice flour with a little amaranth and tapioca, the result was a good tasting light and fluffy. Hope this helps.
