Gluten Free Gourmet Sausage Salad Baked Potatoes

Sausages can get a bit boring sometimes, but with gluten free sausages so readily available its easy to change them up and try something new.
Here is my adaptation of the trusted baked potato.
Ingredients
Feta (chopped)
2 Tomatoe and Basil Gluten Free Sausages (pre boil)
Lettuce (chopped)
1 Potato
Salt and Pepper
Sweet Chilli Chunky dips
Butter
How To Cook Baked Potatoes
Wash potato and poke with a fork and bake in the microwave until cooked. Cut open and slice up a little and top with butter.
Chop gluten free sausages into small rounds and fry in a frying pan. Top Potato with Lettuce, Feta, 2 spoonfuls of Chunky Dips.
Drain the excess fat of the sausages and top the potato and other ingredients.
Season with a little salt and pepper.
A tasty dish! Adding a little lettuce also seems to make the meal a lot lighter.
