Gluten Free Kumara Coriander Coconut and Chilli Soup

Warm up those winter nights with a bubbling bowl of Gluten Free Kumara Coriander Coconut and Chilli Soup. This is another one of my gluten free experiments, and I must say I am very pleased!
Ingredients
4 Large Orange Kumaras (Peeled and cut into small pieces)
1 Litre of Gluten Free Chicken Stock
1 Onion Finely Chopped
1 Tablespoon of garlic
1 tablespoon of coriander
1 knob of butter
1 Can Light Coconut milk
Water
Salt and Pepper to season.
Lets Make Gluten Free Soup
In a large pot heat the chicken stock coriander, garlic, butter, chilli, and boil the kumara and onion until soft. Remove the kumara and onion from the stock, and keep aside, Mash the kumara and onion in a bowl adding some coconut cream to soften, once finally mashed with no lumps, place back into the reserved stock, with the remainder of the can of coconut milk. Add salt to taste.
Heat through for 30 minutes.
This soup gets better with time, I like to eat mine the next day, Its great by the cup or bowl full.
