(Gluten Free Kiwi)
2 Cup of Gluten Free Baking Mix
1/4 teaspoon of salt
1 1/2c Milk
2 Egg
water
Makes Enough for 8 pancakes
Sift flour and salt, make a well in the middle and add the egg, add the milk gradually and stir into the mixture. Add water until it reaches the desired consistency.
Allow the batter to sit for an hour so the flour can soften.
Heat a pan on a low to medium heat and add butter or oil to grease. Make your first pancake small... they always seem to turn out badly so get the temperature right with this one but do not use to much batter.
Then pour batter and cook until the pancake bubbles and is golden, turn over and cook the other side.
I tried a number of things on my pancakes some with banana and gf maple syrup, some with gf caramellow chocolate melted in between two, it was rather sickly but pretty darn tasty!
