Gluten Free Pesto Potato Salad
Pesto Potatoes Really Easy - Serve hot or cold.
Ingredients
5 Potatoes
1/2c Sundried Tomatoes
1/2 Red Onion
3 Tablespoons of Basil Pesto
Pepper and Salt.
Peel cube and boil five medium potatoes.
Slice up half a cup of sun dried tomatoes
Dice half a red Onion
3 Heaped Tablespoons of Basil Pesto.
Pepper and Salt To Taste.
Variations:
You can add bacon.If you want a creamier salad put in some mayonnaise.Spring onions Chopped.Sear some cherry tomatoes and pine nuts in olive oil for 1 minute and serve on top.
