gluten free potato salad
I am heading to a cheep and cheerful pot luck dinner with some friends tonight, so have decided to make a gluten free potato salad... and a lot of it, so I know there is at least one thing I can eat there.
Heres what you need to make it.
10 large peeled potatoes cubed.
4 chorizo sausages (gf)
4 Rashers of Bacon
3 Spring Onions
4 Table Spoons of Whole Grain Mustard (gf)
1 1/2 cups Gluten Free Mayonnaise
1 Tub of Sour Cream
1 Pinch of Chilli
Salt
Pepper
Cook the potatoes until soft, in a separate bowl combine sour cream, mayonnaise, mustard, salt and pepper and stir through.
Pre-boil the chorizo until cooked, then chop into small pieces and fry.
Slice the spring onions and stir through the dressing.
Grill the bacon and dice, stir through the sauce.
Drain the potatoes and allow to cool.
In a large serving dish layer dressing then potatoes then chorizo and repeat then mix through.
This dish is fantastic warm or cold... I really hope everyone likes it cos it smells so good I almost dribbled in it ;)
