Is it possible to follow a gluten free diet most all the time, but if you are exposed to something that has small amounts of gluten (seasoning or similar) that you aren't aware of, does it take you back to SQUARE ONE immediately?
i.e. do you immediately have the same serious symptoms and have to completely start over?

My Journey with being gluten free has been a slow one, in the beginning it was just sensitivity, so i cut out breads, pastas and still had gluten in sauces and things "I could not avoid" like soya sauce on my sushi etc.
But after trailing a completely gluten free diet I felt much better... and boy do I know when I have been glutened!
There is no hard and fast rule, it really depends on the severity of your symptoms. You have to think about what is best for your body because coeliac disease can cause nutritional problems which lead to a large array of health problems in later life.
So - I guess what I am saying is - how much - and how you deal with it can effect you. I no longer sit down to a bowl of pasta... occasionally i run into flavoring on chips with has gluten in it and I am ok - just a bit itchy and bloated... but pigging out on burgers, pasta and real bread would leave me with brain fog, throwing up, tummy cramps and ecezma so bad it bleeds!
To me its no longer worth it.
