Gluten Free Recipe Lamb Feta and Spinach Pesto Spaghetti
by Gluten Free Kiwi
Last night as I was ransacking my cupboards for food I discovered I had the perfect ingredients to make a dish I had been craving ever since I went to an Italian restaurant with friends and saw them eating pastas and pizzas.
Luckily I was famished as I got home from the gym as this is a fairly filling meal.
Makes enough for 2 people
Ingredients
1 Pottle of Spinach and Sun dried Tomato Chunky Pesto with Cashews
1/2 Pack of GF San Remo Spaghetti
1/4 Red Onion - Diced
2 Cups of Spinach - Chopped Roughly
1 Small Red Capsicum - Diced
3 Mad Butcher Lamb Patties (I was to lazy to make meatballs)
1/4 Block of Crumbled Feta
Salt and Pepper to taste
How To Make The Dish
In a fry pan cook the meat patties and put to the side.
Chop Onion and Capsicum and cook in the fry pan until softened and caramelized.
Chop the meat patties into chunks (great meatball alternative) and put into the pan with the onions and capsicum
Boil the water and cook the pasta according the the instructions on the pack (takes around 8 minutes).
Drain the pasta.
Combine ingredients (vege, pesto, pasta, feta) and stir well.
Season with salt and pepper and serve immediately.
DELICIOUS!!!
