3 Capsicums
300gm Mince Meat (beef or pork)
1/2 Onion
1 Grated Carrot
1 Egg
Salt & Pepper
Cut Capsicum in half and scoop out the seeds.
In a bowl combine mince, onions, carrot, egg, salt and pepper.
Stuff the capsicums with the mixture and bake in the oven for 3/4 hour to 1 hour (until the meat is cooked) on 160 degrees.
Serve with Rice - this dish is great sprinkled with a little Parmesan.
