Gluten Free Red Curry With Pumpkin and Potato Recipe
Ingredients
1 Packet Asian Home Gourmet Red Curry Paste
350mls Coconut Milk
1/4 Pumpkin Cubed, Skinned and Steamed
1 Potatoe Cubed and Steamed
1 Onion Diced and steamed
300g Chicken breast chopped
Oil
Chilli and Coriander to Garnish
2 Cups of cooked rice.
How to make it
1. Cook the spice paste for 1 minute
2. Add the coconut milk and stir on a low heat until oil rises to the top.
3. Add the chicken and cook for 5 minutes.
4. Combine the steamed vegetables and cook for another 5-10 minutes.
5. Serve Over Rice and Garnish with chilli and coriander.
