Serves 2-3
You will need:
6 Gluten Free Sausages (I like the German Bratwurst from Traiture)
1C long grain rice.
Water
Nando's Peri Peri sauce
2 medium capsicums (I use 1 red and 1 green)
1 small red onion
1 zuchini
1 lime
Olive oil
Tamari (check the label to make sure it's gluten free)
Method:
1. Place rice in pot and wash twice with cold water.
2. Add water to pot (1.5cm above the level of the rice) and 2T of Nandos sauce, stir.
3. Put lid on pot and bring to boil. Once the rice is boiling reduce to low heat at leave to cook for 10 mins.
4. Cut the veges into bite-sized pieces.
5. Heat a few teaspoons of olive oil in a pan/wok.
6. Add the veges and stir fry on high until the onion wilts.
7. Turn off the hear and add the juice from 1 lime, 1-2t of tamari, cracked pepper to taste and then stir though.
8. Grill/fry the sausages then chop them into quarters.
9. Dinner is served!
If you like it HOT stir more nandos sauce through the rice before you serve it.
Cabbage is a good substitute for zuchini in this meal.
