Gluten Free Savoury Beef Mince with Red Wine
Ingredients
500g Beef Mince
2 Large Carrots Grated
1 Cup Sliced Onions
3 Cups of Mushrooms Sliced
2 Cups of Cubed Potatoes (microwave them on high for 2-3mins before adding them to the pot)
1 Cup of Frozen Peas
1 Glass of Red Wine
½ - ¾ C water
Pepper & Salt
Olive Oil
1-2t Mixed Herbs
1 Teaspoon Soy Sauce
Rice Wine Vinegar
1 ½ Teaspoons of Minced Garlic
How To Cook Gluten Free Savory Mine with Red Wine
Put the mushrooms in a small saucepan and cook them on a low heat until they reduce to about 1/3 the original volume.
While the mushrooms are cooking saute the onions and garlic with olive oil in a large saucepan until they're transparent.
Set them aside, then brown the mince in the saucepan. Once the mince is brown add the red wine, onions, herbs, water and vegetables. Add the soy sauce, vinegar, salt and pepper.
Cover and leave to simmer for about half an hour.
Check the seasoning – you may want to add more salt and pepper, or vinegar. The longer you leave this cooking the more the flavours will develop.
Note: Thicken the savoury mince with some cornflour dissolved in hot water. As well as making the gravy thicker cornflour gives food a good-looking gloss.
This makes a huge potful. You can eat it alone or as a sauce on rice and pasta. I like to eat a bowlful with a gluten free cheese scone.
