Gluten Free Jam And Scones
I was craving something for brunch this weekend... Something to go with a cup of tea... So I thought back to something my grandma would make, but with a gluten free twist! Here is My take on Gluten Free Scones and Jam, an old English favorite.
Ingredients:
Anathoth Raspberry Jam
2 cups Gluten Free Baking Mix
4 tsp Gluten Free baking powder
25g butter or margarine
1 - cup milk (Or dough reaches the desired consistency).
Lets Make Gluten Free Scones with Jam!
Preheat oven to 220°C.
Sift Together the flour and baking powder into a large bowl. Rub the butter into the mixture until it reached the consistency of fine bread crumbs. Make a well in the center of the flour then pour the milk in, mix it until it becomes a soft dough (the amount of milk can vary with a gluten free flour as sometimes they can be dry, you may need more).
Lightly flour a Chopping board, and turn the dough out onto it, knead it gently 3 or 4 times. Roll the Dough out until it is 2cm Thick. Then cut into 4cm Squares and Place on a greased oven tray.
Place in the oven for 12-15 minutes.
Serve with Lashings of Anathoth Raspberry Jam and a little cream. This recipe also goes great with apricot, or any other jam! There are plenty in the Anathoth range to choose from.
