Gluten Free Snack: Lucy's Green Chorizo Burritos

You know those days when you look at the fridge and think... I must eat those things before they go off... but what do I make.

Here is what you need to make my experimental dish
3 Iceberg Lettuce Leaves
1 Gluten Free Chorizo
1/4 Orange Capsicum (or any color really)
1/4 Red Onion
1/2 Avocado
Left over Salsa.

Heat a pan with oil and slice the chorizo, onion and Capsicum thinly then add to the hot pan.

Cook until the meat is warmed through and onions are soft.

Slice the avocado and place a little inside each of the lettuce leaves.

Spoon the meat and vegetable mixture into the lettuce leaves and top with the salsa.

Season with salt and pepper.

Roll into wraps = kind of like a burrito.

Pretty good - for a total fluke!
