Gluten free muffins make a yummy snack - I tend to make them with a baking mix - as sometimes with muffins getting the right level of gluten replacement can be hard.
I add my favourite savoury items, onion, corn, bacon and capsicum for a bit nutritional value and a salty bacon kick.
Great heated up in the microwave with a little onion relish... DELICIOUS!
