Gluten Free Snack Of The Day Quick Tuna Rice Salad Recipe




1 wee can of Sealord flavoured tuna (Savoury Onion or Sundried Tomato is yum!)
1 Uncle Ben's microwave in the bag white rice
2 handfuls of roughly chopped Baby Spinach leaves
1 cup of frozen corn
2 tablespoons of Sweet Chilli Sauce
1 tablespoon of Tamari (GF soy sauce)

Precook the rice in a bag. Combine all ingredients in a mixing bowl. The hot rice will soften the spinach and the frozen corn. Mix well. Divide into portions in containers (usually makes 3 lunches or so). Pop in the fridge overnight allowing the flavours to marinate and the corn to fully defrost.

This is a fresh and crunchy salad with hardly any prep time at all. Yummy after marinating. Keeps 2-3 days in the fridge.
