I seem to be all about rice cakes at the moment (and I mean the big round things that look like a coaster rather then rice crackers).
You can get them in a range of gluten free flavours and smear on your favorite toppings for a quick snack or a bread alternative for a sandwhich.
I like to go with the thinner variety as they are less likely to crumble and send pieces of topping down your the front of your shirt.
I like to top mine with hot smoked salmon that I get from my local supermarket and a little spinach and pesto.
