Gluten Free Snack Of The Day: Stuffed Lettuce Leaf

One major complaint I hear from other gluten free kiwi's is that being gluten free is to expensive and they can not afford to eat 'gluten free' food.

My response is then don't!

Being gluten free is all about being creative with your ingredients and taking a healthy approach to eating.

When I want to make a wrap or sandwich in summer I like to use an iceberg lettuce leaf. These make a great wrap assuming the lettuces are a decent size then you can fill them up with your favourite sandwhich fillings.

I like to add Shredded Chicken, Mayo, Cucumber and Grater carrot.
