Home made sushi is a great gluten free snack to keep you going through the day, or as a light lunch.
I like to make mine with gluten free rice wine vinegar a little shredded chicken, some sweet chili sauce, avocado, capsicum and some gf mayonnaise.
My lunch box has a lid which i store in the freezer and it keeps my sushi cool until its time to eat it.
