I have been experimenting with rice noodles because of there gluten free status, they seem to be reasonably cheap and go a long way... So the other night I was playing around and invented this great Gluten Free Spaghetti and Sausage Casserole Recipe... and thought I would share it with you :)
5 Gluten Free Hellers Tomato and Basil Sausages
1 Big Jar of Gluten Free Tomato & Red Wine Pasta Sauce
1/2 a Pack of Rice Noodles
1/2 an Onion
1/2 Pack of Baby Spinach.
1 Teaspoon of Garlic
1/2 Teaspoon of Chilli
Salt and Pepper To Season.
(Add Fresh Basil if you have it)
Precook the Gluten Free Sausages in a large pot of water, remove from the water and shop into slices. Cut the onion into slices then combine garlic, onion and sausage slices in a non stick pan with a little oil.
Stir until the onion is softened then add the Pasta sauce & Chilli. Heat Through.
In a Separate Pot 3/4 Full with Boiling water and add the rice noodles, cook on a low heat for 3-5 minutes until the rice noodles are cooked.
Add the Spinach to the sausage and sauce mixture and allow to wilt.
Drain the noodles add a little oil so that they do not stick then combine them with the sausage and sauce mixture.
Serve immediately with a little salt and pepper... I like to have mine with a little steamed Broccoli on the side for some green... would also go great with salad or gluten free garlic bread.
