Gluten Free Stuffed Spud Recipe
8 potatoes
5 sun dried tomatoes chopped
1/5 block of feta
1/2 red onion diced
2 cups of spinach
2 chorizo diced
2 Tablespoons of butter
2 tablespoons of milk
Wash the potatoes and prick with a fork, place in the microwave for 20-30 minutes until cooked.
Cool the potatoes on a chopping board.
Fry the Chorizo and Onion until the onion is soft, add the spinach and cook until wilted.
Hallow out the potatoes leaving 6mm worth of potato attached to the inside of the skin, place the potato you scoop out in a large bowl.
Mash the potato in a bowl with milk and butter. Add the Sundried tomato, feta, chorizo, spinach and onion and mix well. Season with salt and pepper.
Scoop the stuffing mixture inside the hallowed potato.
Fan Bake on 200 degrees for 20 minutes.
Great Cold or Hot - Serves For - I like to make a few more and take them to work for my lunch.
Go well with a green salad or coleslaw.
