Makes for 3 serves
Ingredients
Gluten Free Meatballs (See Recipe LINK)
1 Jar Gluten Free Tomato & Basil Pasta Sauce
1 Onion (diced)
1 Green Capsicum (diced)
5 Mushrooms (diced)
1 Pack of Gluten Free Pasta Spirals
Red Wine (Optional)
Method
Brown the Meatballs until the outsides are sealed, then add the onion and capsicum and heat until cooked through.
In a pot boil water and good the gluten free pasta spirals according to the instructions on the pack.
Once the meatballs are cooked and veggies are soft, add the pasta sauce & mushrooms and heat through, mushrooms should be soft (you can also add a little red wine at this point if you like).
Once the Meatball and sauce mixed is cooked, and the pasta is al dente, drain the pasta and stir through the sauce and meatballs. Season with heaps of freshly cracked pepper and salt. If you have any Italian Basil its also nice to chop some of this on top and a nice glass of Pinot Noir.
Serve with a side salad... This is a great hearty meal for a cold night.
