Tuna and Mixed Salad Surprise
Need a work lunch.. I have been really struggling lately with
finding appropriate things to eat for lunch at work.. here is one that is proving great, and you can spice it up with a new flavour each time you try
What you Need
1/2 an Avocado
1/4 Red Capsicum
1/4 Spring Onion
1 Cup of Mixed Salad Greens
1/5 of a Cucumber
1 Tin of Flavored Tuna
feta or nuts and seeds... optional.
In a container (I use the Klip It air tight ones)
Combine Sliced Capsicum, Cubed Cucumber, Chopped Spring Onion,
Salad Greens and toss until mixed through.
The key is to not mix the tuna with it until its time to eat.
I take a different flavour of pams or sealord tuna with me each time and stir it through as I go.
A great snack, with a bit of protein in it to keep you going for the afternoon... Its also great if you sprinkle a few nuts and seeds in, and feta if you have it.
The flavored tuna also means you can avoid dressings.
