Gluten Free Turkish Sausage and Roast Potato Salad

I made the loveliest warm summer salad last night for dinner. Gluten free of course.

Ingredients


4 Hellers Gluten Free Turkish Sausages
1 Avocado (Chopped into Chunks)
1 Large Spring Onion (chopped)
8 White Button Mushrooms (Sliced)
1/4 Cup of Feta
2 Handfuls of Baby Spinach
2 Potatoes

Chop Potato into cubes and roast until cooked then cool. Boil water in a Pot and Precook Sausages. Once sausages are precooked, chop into pieces and Fry in a pan with Mushrooms until Cooked and Sausages are Browned. Remove Sausages and Mushrooms from the pan and allow to cool.

Combine Spinach, Spring Onions, Avocado Cooled Potato and Chopped Feta and Cooled sausages and Mushrooms. Toss Lightly.

Should be enough for 2 or 3 Depending on how hungry you are.

Perfect mix of Creamy and Salty... Heaps of Flavor so you do not need dressings, Maybe a little salt and pepper to taste.

Great salad will be making this one again.
