Makes Enough for two plates of gluten free warm spinach and chicken salad. This is a nice light recipe for lunch or dinner.
I have been experimenting in my gluten free kitchen with salads... so look out more to come.
Ingredients
2 Cup of Spinach 5 White Button Mushrooms 1/5 Red Onion 1/2 Avocado 1/2 Smoked Chicken Breast (check it is GF) Salt and Pepper to season Pinch Paprika Pinch Sweet Basil Oil
Lets Make Salads
Place oil in a fry pan. Chop mushrooms into pieces, add onion, add a pinch of sweet basil and paprika and toss until softened.
Place spinach in the middle of the plate. Chop Chicken Breast and scatter over the spinach. Chop up avocado and toss together all of the ingredients on the plate.
Season with salt and pepper and serve immediately.
