I am just beginning a gluten free diet today and I'm wondering if things containing corn starch can be eaten? Also what about mayonnaise?

Hey Susan,
Corn starch is fine - it is derived from form (you want to watch out for wheat, hydrolyzed wheat or gluten based products)
With regard to mayonnaise... it depends (things which have malt vinegar in them are a no no (malt is derived from barley which contains the gluten proteen).
The best advice I can give you is to read the labels - New Zealand brands are really improving with regard to labeling gluten free products. And there are plenty in NZ supermarkets.
Things to watch out for:
malt,barley, gluten, wheat, stocks (watch out eating soup or rissottos up sometimes there stock has wheat thickener in it) gravys and sauces.
(hydrolyzed wheat protein in shampoo and conditioners)
Maggi has just brought a range of gluten free sauces and gravys which are great and easy to use... using mainly corn thickener.
