I have experienced weight fluctuation since going gluten free.
While I can not pin point the reason for yours I will tell you more about my experience.
When I first went gluten free I went on a low stress diet. This is where I basically ate "like a caveman" - natural foods that were not highly processed and were recoganisable as an ingredient.
By that I mean fresh fruit, vege, nice fillets of meat, home made hummas and spreads.
Things that were around when my grandmother or great grandmother was alive.
Needless to save this cave man diet had me looking very slim as I ate little to no processed foods and only natural starches.
The problem with "gluten free" substitues such as gf bread/ pasta/ buscuits etc. is that they are very low in fibre and often high in sugar to compensate for the lack of gluten.
After my first 6 months of eliminating allergies I slowly got into bad habits of takeaways here and gluten free pasta there - and began to put on weight due to eating high amounts of sugar and not getting enough fibre in my diet.
I have managed to find a middle ground now I try and eat resonably healthy and not eat to many startchy foods and my body let's me know if it is unhappy with my eating desicions and has had enough.
So my question is...What types of foods are you eating. Run me through the things you have eaten in the last 2 days or so :)
