Greg's Gluten Free Antipasto Salad

My French flatmate has a way with food - and despite his love of all things revolving around cheese, bread, pasta and cream, he has really done a fabulous job of cooking gluten free and low dairy on his night cooking in the flat.
I arrived home from work to find this lovely salad waiting for me.
What You Need
Love *laughs*
hard boiled egg
cucumber
sundried tomatoes
olives
capers
mussels
Lettuce
Chicken (I use thy - its got more flavour)
Lemon Juice
Pepper.
*NOTE be sure to check labels in anything stored in brine - I know gerkins can sometimes have gluten in them due to the use of a certain vinegar
Marinate the chicken in lemon juice with a little pepper, heat a fry pan and stir fry until cooked. Allow to cool.
On a bed of clean lettuce place the cucumber, capers, chopped sundried tomatoes, Olives, Hard boiled egg and Mussles. Scatter over the chicken and season with salt and pepper.
DELICIOUS - and great when the hard boiled egg is still a little bit warm *Dribble*
