2 Cups of caster Sugar
1 Cup Healtheries Simple Baking Mix
2/3 Cup cocoa powder
70g chopped nuts (I use walnuts)
4 beaten eggs
1 Cup stewed apple
2 teaspoons vanilla essence
Preheat oven to 1600c (1400c fan oven). Line a 22cm square cake tin with baking paper (I spray with cooking spray as well.
Combine the sugar, sifted baking mix, cocoa and nuts in a bowl.
Add the beaten eggs, vanilla and apple and fold until evenly combined. Pour into cake tin and bake 40-45 minutes. Do not over cook - the brownie should be fudgy in the middle. Cool in the tin.
Serves 8 large slices or 16 smaller slices.
