My Gluten Free Journey Only Really Began in 2006... well that I knew of, Since childhood I have had ecezma, asthma, and allergies...
Before Going Gluten Free
It was not until my teenage years and particularly university that my skin, mood, depression, weight gain, bloating and all the other fun gluten intolerance symptoms really kicked in. I originally went to my Dr and Asked for some allergy tests, but was told I would always have ecezma and should just deal with it... so I just put my symptoms down to bad nutrition, stress, and tiredness.
After leaving university I still noticed my health was not 100% and my allergies seemed to get worse, after a 4 month working holiday in Australia, I returned to New Zealand to have the worse allergies to date... where after eating food at a wedding, my face puffed up, skin went red and weepy, had a terrible rash, sore throat and glands... and generally felt terrible and wanted to cry... this was it.. when I decided something must be done.
My Diagnosis
My Father actually suggested I try a low stress diet, eating only raw fruit and vegetables, and meat... no carbs, refined sugars, or processed goods and caffeine. This proved it... gluten was making me miserable, and from that moment in time I said goodbye. From here I was off to see Dr Gluten (Rodney Ford) and get myself tested so I knew exactly what I was up against with allergies. His allergy test confirmed I was Gluten Intolerant, Allergic to Dust Mites, Rye Grass and Minimal Dairy.
From there I decided to research gluten free, along with nutritional supplements to help me get everything I need from my diet. Gluten still occasionally makes its way into my diet, as I am trying to maintain some tolerance to it, but only occasionally, and I cannot handle to much of it... as I found out traveling recently.
Life Is Great Without Gluten
Sometimes it seems like an inconvenience... but I am really happy I have made the choice to look after myself and make better choices when It comes to nutrition and health.
Now days I am making this website, and hoping to help other gluten intolerant and Ceoliac People.
