Nandos Coconut Curry Risotto

Ingredients
50g Butter
5 Chicken Breads
1 Jar of Nandos Curry Coconut Cooking Sauce
1 1/2 Cups of Aborio Rice.
1/2 Can of Coconut Cream
Spinach
1 1/2 Cups of Gluten Free chicken Stock (I Used Massel)
How To Make The Risotto
Brown the chicken in the butter in a large saucepan. Add the rice and coat in the butter. Add the Curry Sauce, Coconut Milk And Chicken Stock Into the pot and simmer on a low heat, stirring occasionally for around 30 minutes.
Add the spinach and allow to heat through... Serve in bowls... I added peas into the mixture to for a bit more colour.
The medium peri peri sauce has a bit of a kick... Delicious
