Need a gluten-free, low-GI breakfast cereal




Hi there

Processed gluten-free cereals cost a fortune. I'd like to make my own, if possible. So I'm searching for grains/cereal products which could work for me - but then need to be low-GI. This rules out cornflakes.

I was thinking of using quinoa flakes as a base. Obviously nuts and dried fruits are fine.

Does anyone have any suggestions?

Hi does it have to be a cereal? You could try buckwheat pancake for a change. Buckwheat is low GI and helps to stablize blood sugar.
My recipe is
1/4 cup Linseed meal, 3/4 cup buckwheat flour, pinch salt, 1 teaspoon gf baking powder.
1 egg, 1/4 cup sugar, 1 tablespoon Olive oil, 1/2 - 1cup of water
Mix the dry ingredients together
In another bowl beat egg and sugar until thick, add oil, then add half water and half dry ingredients
Mix until combined, add a little more water and the rest of the dry ingredients. If mixture is thick add more water (it will thicken as it stands)
Cook as you would piklets or make them larger for pancakes.

Hi,
I have also taken to making my own breakfast cereal and think its much better value and probably lighter in cals. In addition to the usual culprits like cut up dried fruits and loads of seeds (flaxseeds, pepitas, sesame and sunflower seeds) as the main ingredients I use brown rice puffs, rice bran sticks and Amaranth cereal - I have found you have to hunt around a bit at health food stores to find these things but they are all v good for you and make a good cereal base.

You can buy Gluten free oatmeal and steel cut oats they are a medium GI food but you can lower the GI by adding fiber to the cereal as in benifiber, for every fiber gram you add you subtract it from the carb count on label add enough till you get under 10 carbs then it will be low GI.

Make your own cereal NEW

Hi there,

I have made my own muesli from using rice flakes, nuts, seeds, dried fruit. You can either toast it with some apple juice (no / little oil) or have it as bircher muesli where you soak it in juice - tastes delicious! Most of the ingredients I get for this come out of the bulk bins. It really is up to you what you put in it though!
