It has been a while since I had had a good batch of pancakes... prior to going gluten free I guess pancakes were not my friend... but these pancakes are AMAZING! No need to be reluctant to use premade mixes, while being GF, these are also egg and dairy free, if you make them according the the instructions on the packet. I served mine with a little maple syrup and fruit!
