Paleo Mac n Cheese

It’s a long weekend here in New Zealand and due to some poor planning on my part I was at a loose end this weekend. I thought a friend was here from out of town, but turns out she is not here until Monday. So what better to do on a wet, long weekend then get my chef on.

Craving comfort food, try this tasty little number with cauliflower, coconut milk and love. Delicious and comforting on a cold day or when you are craving carbs.

Ingredients

  3. 1 head of a large Cauliflower
  4. 2 T. Ghee or coconut oil (or grass fed butter if you can tolerate dairy)
  5. 1 t. Pink Salt
  6. 1 small butternut pmpkin chopoed into cubes
  7. 1 small Carrot diced
  8. 1 Onion diced
  9. 2 Cloves or garlic
  10. 1 t. Ground Mustard
  11. 2 pinches of ginger
  12. 2 pinches of nutmeg
  13. 1 can Coconut Milk
  14. 1 Egg
  15. Salt and Pepper
  16. 4 Rashers of bacon
Instructions

For the Mac
  1. Option 1 - Chop and crumble with cauliflower into chunks into a vegetable steamer. Chop any larger stalks into smaller pieces. Steam for 5 minutes.
  2. Optional: While the cheese sauce is simmering cook 4 rashers of bacon and chop.
For the cheese sauce
  1. Heat the butter on a medium to high head. Add the garlic, carrot, onion, mustard, nutmeg, ginger, pumpkin, carrot, onion in a pot. Saute for 10 minutes until the onion is glossy. Add the can of coconut milk to the pot and bring to a simmer for 10 minutes until the pumpkin is cooked. Pop them the blender or food processor and blend into a cheese sauce. Once blended add an egg in to thicken the mixture and add to the creaminess.
  2. Pour the cauliflower into the pot the sauce was cooking in. Add the bacon and pour over the cheese sauce. Season with salt and pepper to taste.
  3. Serve immediately and top with a spring of coriander.
